AMAZING Vegan Tacos


BEST Vegan Tacos EVER!

This recipe is incredible! I have no idea why these tacos aren’t made everywhere. And they celebrate both cooked and raw veggies and fruit to boot!

  • Prep: 10-15 mins


  • 5-6 red radishes, cut in half
  • 1 carrot, sliced
  • 1 tbsp coconut oil
  • 1 large sprouted grain tortilla (Ezekiel makes great tortillas)
  • 1 slice of vegan cheese
  • 1 tbsp coconut oil
  • 1/2 avocado
  • 1/2 mango
  • Herbs (I love using basil, cilantro, chives, and dill…and I use all of them)
  • 1 cup spring lettuce or mustard greens
  • Sprinkle of sea salt
  • Ground black pepper


  1. Cut the radishes in half and slice the carrots into thick slices.
  2. Heat a medium frying pan on medium heat. Add 1 tbsp of coconut oil, as well as the sliced radishes and carrots. Stir occasionally for 10-15 minutes. Prepare the remaining ingredients while the veggies are cooking.
  3. Slice avocado and mango, and set aside.
  4. Mince herbs and set aside.
  5. Wash the greens, dry, and set aside
  6. In a separate pan, heat 1 tbsp of coconut oil in a medium frying pan on medium heat. Place the tortilla in the pan. Place one slice of vegan cheese on 1/2 of the tortilla. As the tortilla begins to golden, softly fold the tortilla in half. Cook for an additional 30 seconds or so, to allow the cheese to melt.
  7. Remove the tortilla and layer the sliced avocado and mango on top of the cheese. Next layer on the herbs, carrots, greens, sea salt and pepper.
