This quick fall salad is the perfect combination of spicy and sweet! And it makes good use of the daikon radish root and it’s green tops. It can be tricky to find daikon greens, as they are often removed from the daikon radish root. Try looking for it at your local farmers’ market (it’s where I purchased mine). If you can’t find it, use another spicy green like mustard greens or collards.
1 red, yellow, or orange sweet bell pepper, thinly sliced
1/2 medium daikon radish, thinly sliced
4-5 leaves from daikon radish, sliced into strips
1 small handful of cilantro, chopped
1 tbsp rice vinegar
sea salt to taste
1 tbsp olive oil
3 tbsp hemp seeds
(optional) 1/2 medium avocado or 1/4 cup sunflower seeds
Mix all and allow to marinate for 5 minutes. Enjoy!
