RAW Vegan Summer Nectarine Milkshake (3-Ingredients)

This is a fantastic summer treat! Celebrate nectarine season with this delicious, creamy, raw vegan summer treat! I was craving something sweet and filling, so I created this yummy concoction. Oh (!) and did I mention that I had 10 pounds of local nectarines (purchased for only $3) sitting in my freezer? 🙂 I love the summer!

 

RAW Vegan Summer Nectarine Milkshake (3-Ingredients)

  • Yield: 3 cups (1-2 Servings)
  • Cost: $1.50
  • Prep: overnight + 15 minutes
  • Equipment: Blender of any kind

Ingredients

Prep in Advance (or Overnight):

  • 1/2 cup of almonds, raw and whole
  • 1 1/2 cups of fresh water
  • 1 large nectarine

Nectarine Milkshake:

  • 2 dates
  • (optional) a few drops of vanilla

Instructions

Prep in Advance (or Overnight):

  1. Soak the almonds in water for 6+ hours or overnight in a large bowl. Set aside.
  2. Using a sharp knife, remove the core and seed from the nectarine. Cut the nectarine flesh into cubes and place the cubes on a plate. You may find it helpful to put a sheet of parchment paper or wax paper on the plate to prevent the nectarines from sticking to the plate.
  3. Freeze the nectarines for 6+ hours or overnight.

Almond Milk: 

  1. Drain and rinse the soaked almonds, and pour them into your blender.
  2. Add 1.5 cups of water to the blender, and blend until the almonds are reduced to pulp.
  3. Let the pulpy milk sit for 5-10 minutes in the blender.
  4. Strain the pulpy milk through a nut milk bag (you can also use cheese cloth or a juicer) into a large bowl. Squeeze as much milk from the pulp as possible.
  5. Pour the strained milk into a mason jar and store the jar the refrigerator. The milk will stay fresh for up to 4 days.

Nectarine Milkshake:

  1. Pour 2 cups of almond milk into a clean blender. Add the frozen nectarine and 2 dates.
  2. Blend the ingredients until smooth and creamy.
