This awesome recipe features SUNFLOWER SEEDS! Sunflower Seeds are derived from the magnificent sunflower, which can grow up to 17 feet tall! Sunflower seeds are a great survival food that is high in protein and a wonderful source for calcium, iron, magnesium, phosphorus, potassium, several b-complex vitamins, and vitamin A. Sunflower seeds are normally sold in the seed form; however, you can also buy sunflower sprouts and sunflower seed oil and butter in many health food stores. Sunflower seeds are typically used to make raw pates, breads and crackers, and are used in salads; however, you will find that I use them in a wide range of recipes due to their versatility and flavor.
#EatWorthy 50-CENT RAW Cookies
Yield: 8-10 squares
- Prep: 10 mins
1/2 cup shredded coconut, organic and unsweetened
1/2 cup sunflower seeds, raw
1/4 cup raisins
sprinkle of cinnamon
(optional) 1/4 tsp vanilla extract
- Food processor (any size)
Using a food processor, process the shredded coconut in a food processor until the oils begin to come out of the coconut (about 30 seconds).
Add the sunflower seeds and process until they are broken down.
Lastly, add the raisins, cinnamon, and vanilla (optional), and process until the raisins are broken down into small pieces.
- Form into small squares with your fingers and store in the refrigerator or freezer.
